Modern restaurant where you can taste delicious portions that combine traditional flavors with textures and concepts of current creative cuisine at popular prices, and then enjoy one of our liqueurs, in a pleasant evening enlivened by live music.

Miguel Angel Rodriguez Gancedo is the owner and soul of Umma. This young professional, apart from growing up in his parents' kitchens and studying at the Santander hospitality school, has been through some of the best kitchens in Spain. The hermitage in Toledo, Mugaritz and Zuberoa in San Sebastian, Celler de Can Roca in Girona. His last step abroad was at the Noma restaurant in Copenaghe, closing his learning cycle with this. After spending a season at Cenador de Amos as head chef, he decided to return to his parents' restaurant to give it a change and rename it what it is now. Umma Restaurant.

We pursue what is natural, simplicity, tradition without complexes, informality. We look for seasonal products, recognizable flavors, we apply simple processes so that the food reaches the table in all its splendor. Our challenge is for everything to combine perfectly, which is why we understand that taste must predominate first, without forgetting the importance of the other senses, the techniques for the perfect texture, bright colors and penetrating aromas. Umma does not have labels, it is only governed by good-tasting cuisine.
